Bikini Recipe
Serves 10 servings
To make the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Citrus Syrup: Place the listed components into a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, turn off the stove and leave to reach room temperature completely. Decant into an sealable bottle, close it and store in the fridge, where it will keep for about four weeks.
To make Premix: Mix every spirits and syrup in a sizeable container, let it rest for 60 minutes, then pass it through , ideally through cheesecloth, to ensure it's completely strained.
To serve: Pour 85ml of the batch mix to a mixing glass filled with ice, and stir carefully for a minute until cold. Filter to a frosted cocktail glass or equivalent, top with some cranberries and complete it using a brief mist with the mandarin essence above the glass.
